The invention concerns the use of the combination of a pectin with an ionic emulsifier for stabilising a proteinic acid beverage, in particular an acid milk beverage, said beverage containing insoluble cocoa particles. The invention also concerns a method for preparing such a stabilised cocoa-flavoured proteinic acid drink.
