摘要 <p>PROBLEM TO BE SOLVED: To provide a novel yeast that can produce organic acids and the flavor components in additionally high productivity and methods for producing alcoholic beverages and foods by using the novel yeast. SOLUTION: This novel yeast shows the resistance to a citrate synthase inhibitor and can produce organic acids in high productivity. The inhibitor is typically 2-oxo-glutaric acid and the novel yeast is typically a yeast in Saccharomyces cerevisiae. This yeast can produce alcoholic beverages and foods having stronger sour taste and including increased amounts of malic acid and/or succinic acid both of which are palatably preferable in their organic acid composition in comparison with conventional alcoholic beverages and foods.</p>
