<p>The cutting apparatus, for cutting food products (A), comprises an ultrasound cutting element (2) with an associated drive mechanism (4-7) for selectively controlling the advance of the cutting element through the product being cut. - The drive mechanism carries an associated control device (5) arranged to control selectively the rate of advance of the cutting element through the product and to vary the rate of advance locally in dependence on the local characteristics of the product in the zone being cut at that moment.</p> |
