摘要 PROBLEM TO BE SOLVED: To obtain a frozen food-containing gel with heat resistance, mechanical resistance and freeze resistance, and having juicy and soft palate feeling when cooked by heating. SOLUTION: This frozen food is obtained by formulating preferably 5 to 50 wt.% of a gel containing gellan gum and glucomannan or carboxymethylcellulose into a frozen food followed by heating, steaming, and then freezing the thus treated mixture.
