PROBLEM TO BE SOLVED: To provide a method for refining acidic whey comprising removing only acid ingredients therein without removing useful cationic ingredients therein. SOLUTION: This method for refining acidic whey made from cow's milk comprises passing the acidic whey through only a weakly basic anion exchange resin rather than a cation exchange resin to remove only anionic ingredients such as lactic acid from the whey; wherein as a pretreatment step, insolubles may be removed from the whey in advance using a centrifugal separator or the like, and as a post-treatment step, a further refining may be conducted by separating protein from the thus treated whey through ultrafiltration. |
