METHOD FOR PREPARING SALTED INTERNAL ORGANS OF MONOPLEX AUSTRALASIAE

PURPOSE: Method for preparing the salted internal organs of Monoplex australasiae which contains amino acid, amino nitrogen, and lactic acid bacteria in great quantity is provided. CONSTITUTION: Method for preparing the salted internal organs of Monoplex australasiae is composed of the following steps: (i) a first step to smash the internal organs of Monoplex australasiae; (ii) a second step to add protease 0.01-10wt.% such as bromelain, flavoruzyme, neutrase, or protease NP, or add fruit juice 10-100mL such as pineapple juice or the fruit juice of Actinidia arguta; (iii) a third step to maturate at 10-50deg.C; and (iv) a last step to examine pH change, content of amino nitrogen, lactic acid bacteria, and colon bacillus.
