PURPOSE: A method for storing kimchi for a long time by separating kimchi juice from the kimchi and drying the materials is provided to promote the storage life of the kimchi and recover the original state and flavor of the kimchi easily by adding some water. CONSTITUTION: The method includes the following steps: (i) separating kimchi ingredients including white cabbages, radish, leaf mustards and green onions and the kimchi juice; (ii) decreasing the water content of the kimchi ingredients to less than 50% by centrifuging, freeze vacuum drying, vacuum drying, cold air drying, or far infrared ray, high-frequency and supersonic drying the ingredients; and (iii) dehydrating the kimchi juice to contain less than 15% of water by spray drying, cold or hot air drying, or far infrared ray, high-frequency and supersonic drying the juice and getting powdered kimchi juice.
