PURPOSE: A method for producing packed kimchi enriched with water-soluble organic acid-combined calcium is provided to serve the nutritious kimchi product preventing geriatric diseases and having improved storage life. CONSTITUTION: The kimchi is prepared by the steps of:(i) processing a calcium composition by choosing raw material among bones, cartilage, shells, eggshells, seaweed calcium, vegetable calcium, milk calcium and mineral calcium, deciding an input amount of the material, removing impurities from the material, adjusting the size by pulverizing and sterilizing the prepared material; (ii) adding 0.01-10% of the calcium composition and vitamin D to common kimchi ingredients and mixing together; and then (iii) packing and storing with aging the prepared kimchi. The organic acid-combined calcium containing calcium lactate is produced by combination of organic acid containing lactic acid generated from the aging of and calcium of the calcium composition.
