The present invention provides an entrapped health food in capsule or elongated fiber form containing viable unicellular algae, such as Chlorella, Dunaliella and Spirulina and other edible algae cells. In particular it concerns algae cells entrapped in capsules or fibers of salts of alginic acid, such as calcium alginate or alternative edible materials for entrapment. The present invention provides a food where all the physiologically active ingredients are maintained during entrapment. Moreover, the entrapped health food of the present invention enables the algae cells to multiply inside the capsules or fibers and therefore result in an increased number of algae cells per capsule or fiber with preservation of the natural color of the algae.
