The polar solvent used is preferably a 1-4C alcohol, acetone, water, or their mixtures. The extraction takes place at any temperature between ambient and the boiling point, for 1 - 24 hours, using known extraction techniques. After separation of solid matter it may be re-extracted and the liquid phase evaporated, then optionally a second solvent is added such as glycerin, propylene glycol or butylene glycol, and the mixture evaporated a second time. The product contains 10 - 25 % phloridzin, preferably 15 %, and 20 - 40 % polyphenols, preferably 30 %.
