PROBLEM TO BE SOLVED: To provide an acid taste suppressing peptide capable of reducing the acid taste of a food, etc., having acid taste and provide an acid taste suppressing agent containing the peptide. SOLUTION: The acid taste suppressing peptide is produced by fractionating water-extract of pork meat by ultrafiltration and ccllecting the fraction having a molecular weight of 500-1,000. The acid taste suppressing agent contains the peptide. The acid taste and stimulation of a product having acid taste is safely reduced or improved by the use of the acid taste suppressing agent. |
