PROBLEM TO BE SOLVED: To provide a liquid fermented seasoning which enables the intake of nutrients, such as various minerals, calcium, and proteins, dissolved by the fermentation and food-degrading enzymes produced by the fermentation in a process for producing the liquid seasoning, when the liquid fermented seasoning is put on vegetables, fishes, meats, or the like and then eaten. SOLUTION: This liquid fermented seasoning comprises at least (a) a fermented seasoning obtained by mixing Guinea pepper as a main raw material with salt, fruits, spices, tangle, fish meal and shrimp powder and then fermenting the mixture, (b) fish sauce (a fermented seasoning obtained by mixing small fishes with salt and then fermenting the mixture), (c) a Guinea pepper flesh paste obtained by mixing raw Guinea pepper with salt and salting and fermenting the mixture, and (d) a vinegar. |
