PROBLEM TO BE SOLVED: To obtain an agent for suppressing proliferation of bacterium forming heat-resistant spores, having high proliferation-suppressing action on heat- resistant spore-forming bacteria and good biodegradability and excellent in safety to human bodies and provide a method for producing the agent. SOLUTION: This agent for suppressing proliferation of heat-resistant sport- forming bacteria is obtained by oxidizing an analogous compound of cinnamic acid such as chlorogenic acid in the presence of an alkali substance. This method for producing the above agent comprises producing an agent for suppressing proliferation of heat-resistant spore-forming bacteria, capable of developing proliferation-suppressing effect on heat-resistant spore-forming bacteria by oxidizing a compound of an analogous compound of cinnamic acid in the presence of an alkali substance.
