PROBLEM TO BE SOLVED: To produce steam kneaded noodles efficiently producible in a short time and excellent in quality without sticking to a cutting blade by forming a noodle belt for the steam kneaded noodles, then applying ethyl alcohol to the noodle belt, cooling the resultant noodle belt and cutting the cooled noodle belt into noodle strips. SOLUTION: Water is added to a raw material, e.g. a wheat flour or starch and the resultant mixture is kneaded in a steam kneader while supplying steam to nearly completely pregelatinize the raw material flour. The prepared dough is then rolled to form a noodle belt for steam kneaded noodles. Ethyl alcohol (preferably at 15-70 wt.% concentration) is applied to the formed noodle belt and the prepared noodle belt is then cooled and cut to noodle strips to produce the steam kneaded noodles. Furthermore, the application of the ethyl alcohol is preferably carried out by spraying the ethyl alcohol (in an amount of 1.5-5% based on the weight of the noodle belt) on the noodle belt or dipping the noodle belt in the ethyl alcohol for, e.g. 30-60 s. |
