PROBLEM TO BE SOLVED: To obtain a new variant protein, in which an aromatic amino acid in a specific domain of the whole length amino acid sequence of raffinose sysnthase is deleted or substituted, having a function of reducing an oligosaccharide content of raffinose in a plant body. SOLUTION: This new variant protein is a variant protein of raffinose systhase comprising the whole length amino acid sequence in which at least one aromatic amino acid is deleted or substituted in any region of a region having an amino acid sequence of formula I, formula II or formula III existing from the N-end to about 1/7 position of the whole length amino acid sequence that the raffinose synthase has and a region composed of an amino acid sequence having homology to the amino acid sequence of the domain. The variant protein has a function of reducing an oligosaccharide content of raffinoses in a plant body and is obtained by screening a cDNA library derived from RNA extracted from unripe seed of summer soybean, inserting an obtained gene into a vector and expressing the gene in a host cell. |
