PROBLEM TO BE SOLVED: To provide a Konjak (paste made from the starch of devil's tongue) surely containing a non-denaturated partial decomposition product of collagen in the Konjak of the state supplied to consumers and provide its production process. SOLUTION: The objective Konjak contains powder of a partial decomposition product of collagen and is thermally sterilized at a temperature below the denaturation temperature of collagen. It can be produced by adding 30-70 pts.wt. of partially decomposed collagen powder to 100,000 pts.wt. of water heated at 40-60 deg.C, stirring the mixture, adding 3,000-3,500 pts.wt. of Konjak powder or partial decomposition product of glucomannan, stirring the mixture, leaving at rest for a prescribed time, adding an alkaline aqueous solution for the coagulation of Konjak, kneading the product, pouring into a prescribed container to effect the coagulation of the Konjak and sterilizing the obtained Konjak by immersing in hot water of <=90 deg.C. |
