PROBLEM TO BE SOLVED: To provide a method for suppressing an unpleasant smell and sourness of an acidic seasoning containing a citrus fruit juice and a soy sauce and mildening the flavor thereof and to obtain a mildened acidic seasoning. SOLUTION: A soup stock of a tangle in an amount corresponding to 1-80% based on an acidic seasoning or an essence of the tangle in an amount corresponding to 0.01-20% based thereon is added to the acidic seasoning containing a citrus fruit juice and a soy sauce to suppress an unpleasant smell and sourness of the acidic seasoning and milden the flavor thereof. The acidic seasoning is preferably a soy sauce containing Ponzu (juice pressed from bitter orange) and especially preferably the soy sauce containing the Ponzu and grated vegetables. |
