PROBLEM TO BE SOLVED: To provide expanded unpolished rice having a bran layer mainly on the surface of the side face of an almost flattened grain, reconstitutible in a short time and giving tough feeling to the teeth. SOLUTION: The objective expanded unpolished rice 1 is a flattened grain 1a having a starch layer 2. A bran layer 3 composed of a glutinous layer 3a and its surrounding textures 3b, 3c is left on at least a part of the outer surface of the flattened grain 1a. The expanded unpolished rice 1 has a bulk specific gravity of 0.10-0.30 g/mL. |
