PROBLEM TO BE SOLVED: To provide a method for obtaining inner breast meat from the trunk part of poultry and a machine for processing the trunk part of poultry that can substantially save the labor and improve the reproducibility of the meat quality and processability by automatically effecting uniform notching operation, while the inner breast meat and the following tendon remain in their intrinsic positions. SOLUTION: In the process for obtaining the inner breast meat from the trunk part of poultry, at least the part of the inner breast meat facing to the shoulder joint and the tendon attaching thereto are exposed, while the inner breast meat still remains almost at the intrinsic position. The meat processor 18 is used to form notches on inner breast meat or the tendon in the area where the tendon attaching to the inner breast meat. The notches are oriented so that they may extend almost transversely in the longitudinal direction of the inner breast meat or in parallel with the longitudinal direction or oriented in inclination at an angle. Then, the inner breast meat is separated from the trunk part.
