PROBLEM TO BE SOLVED: To obtain food wherein its bitterness is effectively masked to enable the food to be eaten with its inherent taste by adding a (Japanese) persimmon fruit or processed product thereof to food having a specific bitterness ingredient such as anthraquinone. SOLUTION: This food wherein its bitterness is effectively masked is obtained by adding a persimmon fruit or processed product thereof in a certain amount enough to mask the bitterness to food (preferably wastern-style cake or Japanese-style confectionery) containing a bitterness ingredient such as anthraquinone, tannin or flavonoid each derived preferably from aloe, senna, ginkgo biloba, pueraria root or chrysanthemum. The dry weight ratio of the persimonn fruit or their processed product to aloe, senna, ginkgo biloba, pueraria root or chrysanthemum is preferably (1:5) to (1:250), and the food is desirable to be provided as canned food. |
