PURPOSE: A production method of bean-curd by injecting raw soybeans into the manufacturing machine when needed is provided for mass production of bean-curd having excellent flavor and aroma in a short time. CONSTITUTION: The method comprises the following steps: (i) washing raw soybeans not soaked in water and cutting into a granule form; (ii) pulverizing the soybeans after soaking in water of 50-70°C for 7-8min, to prepare soybean liquid; (iii) extracting unmixed soybean liquid by separating the dregs from the pulverized soybeans; (iv) steaming the unmixed soybean liquid and adding brine, to make uncurdled bean-curd; and then (v) compressing the uncurdled bean curd and hydrating, to form a bean-curd product. A fixed amount of brine is continuously added in the process of transferring the unmixed soybean liquid, to maintain a uniform taste of bean-curd.
