PROBLEM TO BE SOLVED: To produce a citric acid-containing beverage and to provide a method for producing the beverage. SOLUTION: This method for producing a citric acid-containing beverage comprises inoculating steamed grains or a starchy raw material capable of producing a koji (a fungus) with a koji mold which is a koji mold of the genus Aspergillus and has a great productivity for the citric acid, culturing the koji mold at a temperature suitable for growing the koji mold for >=35 h and producing the koji containing a large amount of the citric acid in a first step and then adding water to the resultant koji, subsequently keeping the resultant mixture at 45-60 deg.C temperature for >=3 h, eluting the citric acid into water and simultaneously autolyzing various kinds of components in the koji with the enzyme in the koji in a second step. |
