PROBLEM TO BE SOLVED: To provide a method and an apparatus for forming folds which are apt to remain on a finished product which has been treated through a fermentation process, a steaming process and the like on the upper surface of a food material of bun, bread or the like. SOLUTION: Folds are formed as follows: a plurality of fold-forming parts 41 for forming a plurality of folds on the upper surface of a food material 5 are allowed to bite into the upper surface of the food material 5 in the direction of peeling it and making the protruded parts 43 formed by the peeling gradually fat; and the chips of the protruded parts 43 are made acute angles. The apparatus has the following structure: a plurality of rotary shafts 37 are arranged at equal intervals on a desired circle above the food material 5 in a freely rotatable state; each rotary lever 39 supported by each rotary shaft 37 is placed in an inclined state so that the region surrounded by the rotary levers 39 forms a polygonal pyramid thin on the lower side; and the fold forming parts 41 placed on the rotary levers 39 are arranged so that they bite into the upper surface of the food material 5 in the direction of peeling it and making the protruded parts 43 formed by the peeling gradually fat on the rotation of the rotary levers 39. |
