PURPOSE: Pork rib seasoning is provided to remove nasty smell of pork meat, to give flavor and taste, and to improve storage life by mixing Citrus sudachi syrup, Zanthoxylum piperitum concentrate with soy sauce. CONSTITUTION: Pork rib seasoning contains 100mL of seasoning soy sauce, 40-12mL of Citrus sudachi syrup, 3-0.2mL of Zanthoxylum piperitum concentrate, shiitake mushroom, licorice, ginger and water. All ingredients are heated and concentrated. The pork rib seasoning is added to the pork rib and marinated at 3-7deg.C for 12-16hours. Citrus sudachi squeezed filtrate is sprayed on the marinated pork rib and vacuum-packed. Citrus sudachi is squeezed and filtered. Water and sugar are added to the citrus sudachi filtrate and heated to concentrate. Zanthoxylum piperitum concentrate is gained by extracting with ethanol. |
