PURPOSE: A gas stove operating mechanism is provided to help the handicapped or the aged to ignite the gas stove, adjust and extinguish easily, to reduce noise and to improve the thermal efficiency. CONSTITUTION: A gas stove is ignited, adjusted, and extinguished by turning knobs(2,3), and stove burners(11,12) are established to generate average heating power at ignition. The turning range of the knobs and the temperature at ignition are displayed in a control panel(17) of the gas stove. The knob has a sectorial shape part(22) with central angles of 90degrees to 180degrees and a planar lever part(23). Plural protrusions are arranged around the sectorial shape part(22). The stove burners are ignited by turning the knob with gripping the planar lever part in a knob groove by the thumb and the index finger and with supporting the sector-shaped part by other fingers.
