STABILIZATION OF ANTHOCYANIN DYESTUFF BY SURFACTANT

PROBLEM TO BE SOLVED: To provide a process for stabilizing an anthocyanin dyestuff, which is a kind of flavonoids, under weak acidic conditions. SOLUTION: One or two surfactants chosen from the group consisting of a glycerin fatty acid ester, a sucrose fatty acid ester, a sorbitan fatty acid ester, a polyglycerin fatty acid ester, a propylene glycol fatty acid ester, calcium stearoyl lactate, a sodium alkyl sulfate, a soybean phospholipid, lysolecithin and chondroitin sulfate at concentrations equal to their critical micelle concentrations or higher, are added to an anthocyanin dyestuff.
