PROBLEM TO BE SOLVED: To provide a method and a system for desalinating a starch sugar solution with an ion exchange resin in which desalination performance, decolorization performance, stability of pH of the processing sugar solution and stability of the ion-exchange resin are excellent and an isomerization rate of glucose is low. SOLUTION: A starch sugar liquid is supplied into an ion-exchange resin layer where a I-type strongly basic anion exchange resin is mixed with a strongly acidic cation exchange resin. For example, a starch sugar liquid 10 is supplied into a combined-bed type pre-desalination system 6 comprising a cation exchange device 2 where a strongly acidic cation exchange resin is used and an anion exchange device 4 where a weekly basic anion exchange resin is used, and then is supplied into a mixed bed type ion exchange device 8 (a finish desalination system) where a I-type strongly basic anion exchange resin is used in a mixed state with a strongly acidic cation exchange resin.
