Raw peeled potatoes (1) are temporarily stored in a package(2) in an atmosphere (3) sealed from the air, particularly from oxygen. These potatoes can be subsequently cooked in the normal way without disintegration or alteration of their flavour. Two types of potatoes are suitable for conservation in this manner, those with firm flesh, containing 18-20% dry matter, and those with tender flesh, containing 21-23% dry matter. The potatoes are selected (S), washed (L) and peeled (E), by mechanically removing portions of skin. |
