PROBLEM TO BE SOLVED: To produce a ground fish meat with stable quality from a fish with parasitized Ichthyophinus hoferi, and further to produce a fish paste good in quality from the ground fish meat as a raw material. SOLUTION: When producing a ground fish meat from a fish with parasitized Ichthyophinus hoferi, preferably walleye pollock, an additive for inhibiting a protease activity and recovering the gel formability, and optionally calcium are added thereto. A protease inhibitor, preferably a thiol protease inhibitor is used as the additive. When producing a fish paste by using the ground fish meat obtained from the fish with the parasitized Ichthyophinus hoferi, preferably walleye pollock, an additive for inhibiting the protease activity, preferably a protease inhibitor, more preferably the thiol protease inhibitor is added thereto. |
