PROBLEM TO BE SOLVED: To obtain the subject new singly, inexpensively and efficiently obtainable enzyme comprising aβ-lytic protease having a specific optimum pH, action temperature, heat stability, molecular weight and amino acid sequence, useful as a germicide for a food, an antiinfectant, etc. SOLUTION: This newβ-lytic protease has an optimum pH of 8.0, a stable pH range of 6.0-12.0, and optimal temperature range of action of 65-70 deg.C, heat stability stable up to 40 deg.C, 19,287 molecular weight (calculated by electrospray MS method) and about 20,000 molecular weight (SDS-PAGE method), a sequence of 20 residues from an N end amino acid of the formula and a C end amino acid being Asn. The protease is useful for preparing a protoplast and as a germicide for a food and an antiinfectant. The enzyme is obtained by culturing a Xanthomonas IB-9374(FERM P-16928) and purifying the culture solution by ammonium sulfate fractionation, strongly basic anion exchanger treatment, hydrophobic column chromatography, gel filtration, etc.
