PROBLEM TO BE SOLVED: To obtain a fermented soybean milk that is tasty because not only the grassy smell originating from soybean or soybean milk but also unpleasant smell and taste peculiar to fermented soybean milk are suppressed and is healthy by allowing the milk to include an extract originating from sugarcane. SOLUTION: A raw material selected from sugarcane squeeze, extract from sugarcane with a solvent, molasses from sugarcane is passed through a column filled with a synthetic adsorbent as a stationary carrier and the components adsorbed to the adsorbent is eluted with one or two or more kinds of solvents selected from water, methanol and ethanol and the resultant fractions originating from sugarcane is added to the fermented soybean milk. In a preferred embodiment, the soybean milk is fermented by lactobacillus and/or Bifidobacterium and may includes one or two or more kinds of flavors selected from yoghurt flavor, berry flavor, orange flavor and Chinese quince flavor. |
