PURPOSE: A human serum albumin(HSA) having an improved antioxidant activity and a producing method thereof are provided, thereby the natural antioxidant having strong antioxidant activity and stability can be produced. CONSTITUTION: The human serum albumin(HSA) having an improved antioxidant activity is produced by the treatment of human serum albumin(HSA) with protein denaturation-inducing agent and with carboxyl group-modifying reagent and nucleophilic agent, in which the protein denaturation-inducing agent is guanidium salt or urea; the carboxyl group-modifying reagent is 1-ethyl-3-(3-dimethylaminopropyl) carbodiimide), p-bromophenacyl bromide or aminomethanesulphonic acid; and the nucleophilic agent is hydroxylamine, methylamine, ethylamine, propylamine or butylamine. |
