PROBLEM TO BE SOLVED: To obtain processed meat for fried cutlet excellent in taste and texture without depending on meat quality and capable of rapidly cooking, capable of providing cutlet rich in volume feeling and being formed in almost uniform size. SOLUTION: This processed meat for cutlet is obtained by slicing meat into prescribed thickness and area, cutting muscular fiber at a proper interval and depth from one side or both sides of the sliced meat, beating and rolling the meat so that the area becomes a range of substantially 2.2 times to 3.3 times, folding the side edges together toward the inside so that the both side edges become nearly parallel to central line in length direction, folding upper and lower side edges together toward the inside so that the upper and lower side edges become nearly parallel in the center line in width direction, folding the whole in square or rectangle form or folding and rolling the upper and lower side edges so as to be nearly parallel to center line in width direction and folding and rolling the upper and lower side edges at a prescribed interval onto other side edge. This processed meat for cutlet comprises properly attaching separating powder, batter and bread crumb to the outer surface thereof. |
