PURPOSE: A method for making an ice bar using the highest grade banana and the lowest grade banana is provided to maintain unique flavor and color of the banana and to prevent the iced product from melting easily. CONSTITUTION: The banana ice bar is prepared by the steps of: (i) sorting fresh bananas by the qualities and peeling off the skin of the highest grade banana to a third part before fitting the banana in a cone; (ii) peeling the banana fitted in the cone completely and cutting off the banana to a fixed amount; (iii) compressing the lowest grade bananas and filtrating the condensed solution of banana to remove impurities from the solution; (iv) passing the refined banana solution through an overheated steam pipe of more than 80deg.C to get a sterilized sugar solution without sugarless water; and then (v) covering thehighest grade banana fitted in the cone without the cone part with the sugar solution made from the lowest grade bananas and quick freezing the resulting banana product.
