PURPOSE: A high quality of instant tea product made from pine needles is provided, which is good for the stomach, glycosuria, consumption, hypertension and paralysis. CONSTITUTION: The pine needle tea is produced by the steps of: (i) washing pine needles and grinding the cleared pine needles with water of 70-90% based on the weight of pine needles by using a wet grinder; (ii) steaming the pulverized leaves at 100deg.C for 5-15min and cooling the leaves at room temperature; (iii) dissolving the resulting pine needle starch into soluble saccharides being smaller than dextrin by reacting the starch with enzyme of 0.1-1.0% for 1-3hr; (iv) removing the pine needles from the dissolved starch by using a screw press and centrifuging to get a clear solution of pine needle; (v) sterilizing the solution at 132deg.C for 2-3min and concentrating the clear solution to contain 10% of soluble solid; and then (vi) adding 20-50wt% of maltodextrin to the condensed solution and freeze-drying the mixed solution at -40deg.C. The enzyme is made by mixing α-amylase and glucoamylase in a ratio of 1:2-1:5.
