PURPOSE: A method of making fried chicken removing the fat from chicken is provided to give a plain, not greasy taste of chicken food to be suited for Koreans. CONSTITUTION: The method comprises the following steps : (i) preserving raw chicken in a mixed seasoning of ground pepper, refined rice wine, garlic, onion juice and salt for 2-5hr; (ii) grilling the seasoned chicken on a gridiron by using a burner having an inclined flame hole for 3-15min to remove the fat from the chicken; (iii) eliminating left fat on the surface of the chicken by using absorbent fiber or paper; (iv) cutting the chicken into small pieces and covering the surface of the chicken with starch powder, batter of the starch powder and crushed cracker in order; and then (v) frying the resulting chicken seasoned and covered in oil. |
