PURPOSE: A snack product containing powdered seeds of Carthamus tinctorius L. and having improved functionalities is provided, which prevents osteoporosis and osteomalacia and can be preserved for a long time. CONSTITUTION: The health snack is prepared by the steps of: (i) pulverizing seeds of Carthamus tinctorius L. with testae into 200-500mesh and heat treating the powdered seeds with the petal to change the color; (ii) kneading 5-10wt% of the heat treated seed powder, 35-55wt% of flour, 7-15wt% of white sugar, 10-20wg% of milk, 2-5wt% of margarine, 3-6wt% of eggs, 3-6wt% of starch syrup, 3-7wt% of the seed oil and 0.3-1.5wt% of refined salt; and then (iii) forming the mixed dough, baking and cooling the resulting snack. A flake shaped snack is made by kneading 10-20wt% of the heat treated seed powder, 35-45wt% of flour, 7-15wt% of white sugar, 3-6wt% of starch syrup, 1-2wt% of refined salt, 5-6wt% of eggs, 5-10wt% of margarine, and 10-20wg% of milk, dehydrating and forming a flake with the dried dough to be 1-2mm in thickness, and then frying the formed dough in mixed oil of the seed oil and soy bean oil before cooling the flake.
