PURPOSE: A method for manufacturing an ice bar quick freezing fresh raw banana and coating the frozen banana with chocolate is provided to serve the ice bar product having mixed taste of the banana and the chocolate. CONSTITUTION: The ice bar is produced by cutting a stem part(11) of banana to 2-3mm and putting a stick(12) as a handle into a flesh part(10) of ripe banana to the half, peeling the banana with the stick therein and quick freezing the peeled banana to a temperature of 20-25deg.C for 5-6hr and coating the surface of the banana with chocolate to 1-1.5mm in thickness before freezing the resulting banana to 20-25deg.C for about 3hr. The ice bar also can be made by cutting peeled banana into a size of 5mm or crushing, filling a bar shaped mold with the preprocessed banana, inserting a stick(12) into the mold and freezing the mold, and removing the mold from the frozen banana and coating the flesh surface with chocolate before refreezing the coated banana.
