Assembly cracks eggs open to liberate the contents for use in the preparation of portioned egg products. The eggs are positioned in a funnel (23) over a horizontal packaging support (16) and are cracked open so that the contents drains through the funnel (23) into a recess (17). The eggs advance through the assembly in steps. The novelty is that: (a) each funnel (23) incorporates a cracking blade (41) with a synchronised control (37); (b) eggs are delivered to the funnels (23) by a transverse delivery system (15) which is synchronised with the funnel advancement; (c) the length of each transverse delivery system matches the respective funnel; (d) the transverse delivery system is supplied (18) by an egg-feed unit (83), and (e) the outlet side incorporates an eggshell ejection unit (86). |
