PRODUCTION OF OIL AND FAT CONTAINING HIGHLY UNSATURATED FATTY ACID USING LIPASE

PROBLEM TO BE SOLVED: To improve the yield of a process for producing oil and fat containing highly unsaturated fatty acid in high concentration with a lipase. SOLUTION: An oil and fat containing highly unsaturated fatty acid in high concentration is produced in high yield by removing free fatty acid during the hydrolyzing reaction of a raw oil and fat with a lipase. The hydrolysis reaction is carried out while keeping the acid value in the oil phase to <=100. The amount of the enzyme is <=400 units per 1 g of the oil and fat. The highly unsaturated fatty acid is a fatty acid having a carbon number of >=20 and a double bond number of >=3. The highly unsaturated fatty acid is selected from eicosapentaenoic acid (20:5 n-3), n-3 docosapentaenoic acid (22:5 n-3) and docosahexaenoic acid (22:6 n-3). The free fatty acid is removed by supercritical carbon dioxide extraction or distillation selected from steam distillation and molecular distillation.
