PROBLEM TO BE SOLVED: To provide a method for producing granular or powdery dry devil's tongue, by which the granular or powdery dry devil's tongue having a good water-absorbing property, capable of being readily softened, and having good compatibility with other foods can be produced at a low cost, by drying pulverized devil's tongue only with hot air at temperature limited to a drying temperature range. SOLUTION: This method for producing granular or powdery dry devil's tongue comprises kneading gel-like devil's tongue with a lime water, forming the kneaded devil's tongue into 2 to 4 mm linear products, pulverizing and boiling the formed devil's tongue linear products, dehydrating the boiled devil's tongue, and then drying the pulverized devil's tongue with hot air in a temperature range of 40 to 65 deg.C until to give a water content of 4 to 10%. |
