PROBLEM TO BE SOLVED: To provide a means for industrially and efficiently obtaining xylitol from the resultant xylitol solution in a method for producing the xylitol using a microorganism capable of producing the xylitol. SOLUTION: A microorganism capable of producing xylitol is cultured in an aqueous culture medium and solids are removed from the resultant culture solution. Most of ionic substances are then separated from the prepared solution by an ion exclusion method using a strongly acidic cation exchange resin and the residual ionic substance are removed by using a cation exchange resin and an anion exchange resin. The resultant desalted solution is separated into xylitol and other saccharides and sugar alcohols using a strongly acidic cation exchange resin. The obtained xylitol solution is further concentrated and crystallized to produce the xylitol crystal. |
