PURPOSE: A manufacturing method of boneless chicken is provided, to increase the degree of freshness and soften the fleshiness by removing internal organs and bones of chicken while maintaining the original shape of chicken. CONSTITUTION: A manufacturing method of boneless chicken comprises the steps of: (1) opening breast and cutting unnecessary parts of neck, wings, tail and feet after eliminating hair, and removing internal organs; (2) opening and removing rib, backbone, wing bone and tendon; (3) removing backbone from flesh while taking out tendons connected from neck to hipbone; (4) cutting leg joint connected to the hipbone and removing tendon attached to leg bone; (5) removing wing bone; (6) removing leg bone; and restoring the breast as the original status, packaging in a refrigerator between 0deg.C and 4deg.C, and storing until shipping.
