PROBLEM TO BE SOLVED: To provide a method for producing a fermented product comprising efficiently flocculating and separating microbial cells using a small amount of a flocculant without lowering the activity of the fermented product. SOLUTION: This method for producing a fermented product comprises the following practice: a calcium salt is added to a fermented liquor containing the fermented product and microbial cells followed by addition of chitosan and, as necessary sodium polyacrylate to effect flocculating the microbial cells and removing them.
