PROBLEM TO BE SOLVED: To culture a delicious green nutrient soybean sprout having high nutritive value and enabling intensive culture absolutely without using agrochemicals and fertilizers by irradiating the sprout with colored light specific for each growing stage comprising the sprouting, raising and growing stages. SOLUTION: The culture process contains (A) a sprouting stage to put soybeans in a culture vessel and supply water to germinate the soybean, (B) a raising stage to raise the sprouted soybean by supplying water and (C) a growing stage to effect further growth of the raised soybean sprout by photosynthetic action under the supply of water. At least one kind of colored light selected from red light, green light and yellow light is selected for each of the growing stages and applied for a prescribed period. Preferably, red light is applied for 18-22 hr in the sprouting state, green light is applied for 44-52 hr in the raising stage and red or yellow light is applied for 44-52 hr in the growing stage. |
