Maceration of grape harvest material, preheated and consisting of liquid phase called must and solid components such as pips, skins and stalks, comprising injecting of pressurized gas to cause more or less intense agitation of components and improve extraction of aromatic compounds and colorants from solid components and their diffusion into must is new. An Independent claim is also included for the installation for conducting the process as claimed, including tank with entry and exit ports for grape harvest, and the means for injection of pressurized gas into tank.
