A distillation process and assembly has an evaporator whose operation is accelerated by a wiper unit (4). The evaporator unit has an evaporation surface (1) whose area is effectively increased by the formation of droplets. The droplets are created by the action of the rotating wiper (3) profiles. The rotating profiles (3) throw droplets at moving baffle plates (8,9) which deflect droplets back towards the heated evaporation surface (1).
