摘要 PURPOSE: Provided is a method for manufacturing a sausage containing chitosan, thereby improving preservability, decreasing blood cholesterol level to prevent adult diseases. CONSTITUTION: The manufacturing method is characterized by: preparing chitosan solution by dissolving chitosan with 1000-10000 of molecular weight in water; and adding 0.01-0.5 part by weight of the chitosan solution when emulsification occurs. Further the manufacturing method is characterized by preparing chitosan solution adjusted its pH to 5.0-5.9 by: dissolving chitosan with 20000-130000 of molecular weight in lactic acids, citric acids, acetic acids and the like; and adding 0.01-0.5 part by weight of the chitosan solution when emulsification occurs.
