PROBLEM TO BE SOLVED: To obtain a granulated material of potassium sorbate having excellent stability of hue with time. SOLUTION: This granulated material of potassium sorbate has (i) <=0.3 ml/g total volume of the whole pores, (ii) <=450 ppm Na content or (iii) <=0.4 ml/g total volume of the whole pores or <=15% granule hardness and <=1,000 ppm Na content. The granulated material of potassium sorbate is obtained, for example, by (i) subjecting an aqueous solution of potassium sorbate to fluidized bed granulation drying to granulate potassium sorbate, (ii) neutralizing sorbic acid with potassium hydroxide having Na content in the molar ratio (Na/K) of Na to K of <=0.0024 to give potassium sorbate and granulating potassium sorbate or (iii) neutralizing sorbic acid with potassium hydroxide having Na content in the molar ratio (Na/K) of Na to K of <=0.006 to give potassium sorbate, conditioning 100 pts.wt. of the potassium sorbate with 1-8.5 pts.wt. of water and 1-8 pts.wt. of a water-soluble organic solvent, extruding and granulating the resulted material.
