<p>The potatoes for stuffing are used in the food industry as semifinished product. They are blanched in advance, semi-fried, filled by different types of fillings and are frozen.. Regular geometrical form is given to whole, peeled and graded by size potatoes along their long axis. In their interiors, also along their long axis, a hole is carved of regular geometrical form, identical with the external one, or different from it. The hollowed out interior is filled with a filling (5). In case of asymmetrical form (1) of the prepared potatoes both their ends (3, 3) are cut off. In case of identical outside forms and hole forms they form a cylinder (6, 7) or a polyhedral prism (6', 7'; 6", 7"). The equal depth of the wall (8, 8', 8") along the length of the treated potatoes is from 4 to 16 mm. In case of different external form from the form of the hole (9) a cylindrical external form (6) is preferred. The different depths of the wall (10) along the length of the treated potatoes is from 2 to 16 mm. The removed and cut out parts of the potatoes are suitable for the preparation of different potato products: potatoes for filling, mashed potatoes, croquettes, etc. 3 claims, 6 figures</p> |
